The pesto comes together very quickly in a blender. You can also use a food processor. The recipe will make 1 ½ cups which is more than enough for the crostini.

    • Add a 9-ounce jar of sun-dried tomatoes in olive oil to a blender cup.

    Sun-Dried Tomato Pesto

    • 3 tablespoons pistachios shelled
    • ¼ cup grated parmesan cheese (1.6 ounces/43 grams)
    • 1 clove garlic, large
    • ½ cup packed fresh basil (.07 ounces/19 grams)
    • 1 shallot, minced (.08 ounces/22 grams)
    • ½ teaspoon kosher salt
    • ¼ teaspoon ground black pepper

    • 4 ounces fresh burrata (113 grams)
    • 1 cup baby arugula (1 ounce/20 grams)
    • Garnishes such as Maldon salt, minced chives, and Calabrian chiles Optional

    Instructions

Parmesan, Garlic, and Herb Quick Bread

    • Preheat oven to 350°. Line a sheet pan with a piece of parchment paper.
    • Whisk all the dry ingredients - flour, baking powder, baking soda, salt, pepper, and parmesan cheese together in a small bowl.
    • Mince the garlic and herbs.
    • Whisk the wet ingredients - sour cream, olive oil, and heavy cream together.
    • Add the minced garlic and herbs to the wet ingredients.
    • Using a rubber spatula, add the dry ingredients to the wet ingredients.  Press the ingredients together until you have a cohesive dough.  As soon as the flour is incorporated, stop combining the ingredients.  If you work the dough too much, it can become tough.
    • Place the dough on the parchment-lined sheet pan. It is a little sticky so you may need to coat your hands with flour. Shape the dough into a loaf. I generally shape it into the dimensions - 7x3x1.
    •  Brush the loaf with olive oil and sprinkle with flaky salt. Bake in the preheated oven for 30 minutes until the bread is golden brown.
    • Let the bread cool for at least 15 minutes before you slice it. Cut the loaf into ¼-inch slices.

    Sun-Dried Tomato Pesto

    • Add the entire jar of sun-dried tomatoes and oil to the blender cup.
    • Add the pistachios, crushed garlic clove, grated parmesan, and minced shallots. Tear the basil into large pieces and add to the blender cup.
    • Process the pesto for approximately 2 minutes.
    • Add 2 tablespoons of olive oil to the blender. Process again for 1-2 minutes. You should have a slightly chunky pesto. The amount of olive oil needed is an estimate. How much you add is dependent on how much oil is included in the jar of sun-dried tomatoes.
    • Season with ½ teaspoon of kosher salt and ¼ teaspoon of ground black pepper. The recipe makes about 1½ cups of pesto which is more than you will need for 12 crostinis.

    Assemble the Crostini

    • The quick bread has a very soft crumb. Toasting the bread will make it a little sturdier.
    • Brush the bread with olive oil on both sides. Toast the slices of parmesan, garlic, and herbs bread under a broiler for about 2 minutes. Turn the bread over and toast the other side for another 2 minutes.
    • Spread the pesto on the toasted bread slices.
    • Add a few leaves of baby arugula on top of the pesto.
    • Tear the ball of burrata into pieces. Add a few chunks of cheese as well as the creamy insides, on top of the arugula.
    • Garnish the top of the burrata with a few flakes of Maldon salt, some minced chives, and a drizzle of Calabrian chiles.
