    What are Quick Pickles?

Pickling is one of the oldest ways to preserve vegetables, is thought to have started in Mesopotamia. By submerging vegetables in an acidic brine or vinegar, their shelf life is extended for later use.

For extended preservation, vegetables are canned using a boiling water bath. These jars of pickles are shelf stable and do not require refrigeration.

Creat quick pickles by pouring a hot vinegar brine over the prepared vegetables and spices in a glass jar. This type of pickle is not pasteurized, so it needs refrigeration. As a result, they are sometimes known as refrigerator pickles. The soaked vegetables are "raw" and crunchy with a snap when you bite into them.

    Quick Pickling Tips

    • Select fresh mini peppers and shallots without mold or soft spots.
    • Wash a glass jar with hot, soapy water. It is best to use glass - it doesn't absorb odors like plastic.
    • Thoroughly rinse the fresh peppers in cold water.
    • Use a vinegar with an acidity between 4 % and 6%. The balsamic vinegar used in this recipe has 5% acidity.
    • The whole spices used should be fresh. If you use powdered spices, the brine will be cloudy.
    • Don't use sprouting garlic. It will turn blue in the brine.
    • Use granulated sugar. Corn syrup or honey can give off flavors.

    Ingredients

Ingredients for quick pickled sweet mini peppers & shallots.
    • vegetables - mini bell peppers, shallots, garlic cloves, fresh dill
    • brine - white balsamic vinegar, granulated sugar
    • pickling spice - fennel seed, mustard seed, whole black peppercorns, crushed red pepper flakes, kosher salt

    Step-by-Step Pickling instructions

This easy recipe has simple and straightforward instructions. You will have pickled vegetables in about 30 minutes.

Before starting the recipe, wash a 1-quart glass jar in hot soapy water and rinse well.

    Combine the Brine

    Ingredients for quick pickled peppers.

It helps to create the brine first. Prepare the vegetables as the brine simmers on the stove.

    • In a small saucepan, add the white balsamic vinegar, water, granulated sugar, fennel seeds, mustard seeds, black peppercorns, red pepper flakes, and kosher salt.
    • Over medium heat, stir the brine to help dissolve the sugar.
    • Once the vinegar mix comes to a simmer, small bubbles will appear along the sides of the pan.
    • Continue to gently simmer the mix for 10 minutes.

    Prep the Vegetables

Start the vegetable prep by giving the peppers a good rinse in cold water.

    • Remove the stem end from the peppers. With a small paring knife, remove the interior ribs and the seeds by cutting as you rotate the pepper.
    • Cut the peppers into small rings, ¼-inch thick.
    • Remove the papery skin from the shallots. Cut off the stem end of the shallots and continue to make ¼-inch slices. Dispose of the shallot root end. Separate the slices into separate rings.
    • Thinly slice the garlic.
    • Roughly chop the fresh dill.
